A creamy one pan chicken enchilada casserole made with chicken breast that's keto, low carb, and gluten-free. Be sure to check out all 29 keto chicken breast recipes in the post!
Ingredients
- 1.5 lb chicken breast, precooked and shredded
- ¾ cup red enchilada sauce
- 1 tablespoon olive oil
- 1 4 oz can green chilis, mild
- 1-2 tablespoon taco seasoning
- ½ cup chicken broth
- ½ cup sour cream
- ¼ cup cream cheese
- 1.5 cups+ shredded cheddar cheese
Instructions
- Start with pre-cooked chicken. You can choose to use boiled chicken, roasted chicken, instant pot chicken, or even store-bought rotisserie.
- Shred the chicken with forks, meat claws, or an electric mixer.
- Place your skillet over medium-low heat and add the oil. Add the chicken broth, cream cheese, and sour cream, and cook it until the cream cheese is melted and it's all blended.
- Add in taco seasoning, chilis, and enchilada sauce, and stir the mixture to combine.
- Add the shredded chicken to the skillet and simmer until it's heated through. Top with the shredded cheese.
- Place the skillet in the oven and broil for 3 mins to melt cheese if want it browned and crispy. Otherwise, cover the skillet with a baking pan and simmer until melted, 10 mins on the stovetop.
Notes
Shred the cheese from a block instead of buying pre-shredded cheese that contains starch and has more carbs.
A rotisserie chicken would work well instead of cooking it yourself but it will increase the sodium and saltiness in the dish.
If you don't have an oven safe skillet like cast iron, don't put it in the oven to broil and just cover the pan with a baking pan on low until the cheese melts.
