Chicken Divan casserole makes for the ultimate comfort food meal that even picky eaters will love. It’s even better when it’ a keto chicken casserole with lots of cheese, low carb broccoli and in a savory sauce.
I have fond memories of growing up and devouring my aunt’s chicken divan casserole, yet since we’ve been following a keto diet had crossed this as an option from our meal plan.
After finding easy ways to remove some of the carbs from the chicken divan casserole we now have a delicious and easy keto chicken casserole with cheese and broccoli to enjoy. It also makes the best chicken divan casserole out there and only has 7 net carbs per serving!
Lowering carbs even more:
While we also created a homemade condensed cream of chicken soup substitute to use in the chicken divan, if you’re short on time, you can either use one can of Campbells cream of chicken soup which has 20 carbs for the entire can (no added sugar).
While that might at first seem like a lot, with a keto chicken casserole serving size of 8, using Campbell’s cream of chicken soup adds 2.5 carbs to each serving and this recipe still only has 7 net carbs per serving.
CHICKEN DIVAN CASSEROLE INGREDIENTS
Here’s a list of ingredients to make chicken broccoli divan casserole. As an easy meal prep option, always try to keep a bag of frozen broccoli and a bag of frozen chicken in our freezer so we can easily put together quick weeknight casseroles.
While both the broccoli and chicken in this recipe are already pre-cooked, you can cook them both from frozen rather easily. We do not recommend add frozen broccoli or frozen pre-cooked chicken in this casserole, the extra water content will make it too liquidy.
1 lb broccoli, chopped into large pieces
1 lb chicken breasts, cooked and chopped (or shredded)
1 batch of homemade cream of chicken soup or Campbell’s condensed cream of chicken soup
1/2 cup mayo
1 1/2 tsp lemon juice
1/2 tsp curry
1/2 tsp Salt
This recipe is a great way to use pre-cooked rotisserie chicken or your favorite method for pre-cooking chicken. We usually pre-cook our chicken in an instant pot, we also include instructions on how to easily steam your chicken as part of the keto chicken casserole steps.
Ways to Cook the Chicken
If you need to cook the chicken (and didn’t buy a rotisserie chicken) for this easy chicken divan broccoli casserole, in addition to our go-to recipe cooking frozen chicken in an instant pot, you can steam you chicken too:
Steam chicken on the stovetop using a steamer basket and adding 1/2 cup of water to the bottom of the pan. Check the temperature of your chicken after 15 minutes. What size of chicken breast you purchase will determine whether or not they are done at this point or if they need to cook a little bit longer. I add 3-5 minutes on the timer at a time to recheck the temperature.
My chicken breasts ended up taking 22 minutes to cook through in the thickest spots to 165 degrees. Shred or cube the chicken into bite sized pieces after it cools slightly.
LOW CARB KETO CHICKEN CASSEROLE INSTRUCTIONS
Preheat oven 350 and grease a 7×11 baking dish.
Cook broccoli in microwave for 4 minutes covered with 1/3 cup of water until crunchy tender.
In a medium sized bowl, mix the cream of chicken soup, mayonnaise, lemon juice, curry, salt and pepper.
You might be surprised to see curry on the chicken divan ingredient list, but it adds a savory kick to the keto chicken casserole dressing and y0u can’t even taste the curry flavor in the finished casserole. Chicken divan with curry is the only way we make this casserole, it’s delicious!
Spread the pre-cooked cubed or shredded chicken in the bottom of the baking dish and then top with the cooked broccoli.
Using a spatula, carefully spread the chicken divan dressing over the top of the chicken.
Top with 1 cup of shredded cheddar cheese.
Bake the keto chicken casserole for 30 minutes, or until it starts to bubble and all ingredients are heated through.
Serve immediately and enjoy this delicious low carb, gluten free, and keto chicken broccoli divan casserole!

- With a spatula, carefully spread the chicken divan dressing over the top of the broccoli
- Top with 1 cup of shredded cheddar
- Bake for 25-30 minutes until heated through a starting to bubble
- Serve immediately and enjoy!
