Make a healthy high protein frozen peanut butter yogurt bark with protein powder, peanut butter, low fat Greek yogurt, and stevia sweetened chocolate. Whether it's a snack or a dessert, it's a Whole Lotta Yum!
Protein Greek yogurt bark is so good!
Our frozen yogurt bark hits all the right notes with Chunky Monkey flavors of chocolate and peanut butter with just a touch of banana. Even better? Our version is sweetened with a tiny bit of honey (just 1 teaspoon) instead of refined sugar, plus it'll give you a nice protein boost too.
As written, our yummy chocolate peanut butter version is high protein, low carb, gluten-free, and refined sugar-free. We divide the pan into 4 servings, but you could easily eat more! 111 calories per serving and 10 grams of protein.
When the weather starts warming up, making Greek yogurt bark seriously makes the perfect snack or healthy treat. Kind of like eating viral Ninja Creami treats but you hold this in your hands. We've been making variations of this recipe for years, but this just might be my personal favorite 😉
Ingredients you'll need
- Greek yogurt- we used Fage unsweetened low-fat Greek yogurt. You can also make this with sweetened yogurt or even nonfat Greek yogurt.
- Honey- our sweetener, skip this if you use sweetened yogurt. You can also use monkfruit or stevia to taste.
- Protein powder- our favorite is a plant based vanilla powder made without sugar (24 g of protein per serving). Your favorite. brand of protein powder will work great.
- Peanut butter powder- our favorite brand is just peanut butter powder with nothing else added. If your brand is sweetened, you might want to cut back on honey.
- Almond milk or another type of plant based milk or cow's milk.
- Chocolate chips, melted- your favorite brand. We love stevia sweetened chocolate chips. You can sprinkle these on or make a chocolate drizzle.
- Peanut butter, melted - for making a drizzle over the top of the bark
- Banana (optional)
How to make frozen Greek yogurt bark
This is an overview of the recipe steps, get the complete instructions down in the recipe card at the bottom.
- Line an aluminum baking sheet with parchment paper. Set aside.
- Combine the yogurt, honey, vanilla protein powder, and peanut butter powder in a bowl. Add the almond milk to thin out the mixture.
- Spread the yogurt mixture onto the sheet pan in an even layer.
- Top with drizzles of melted chocolate and peanut butter. Add chopped bananas.
- Put in the freezer for 3-4 hours until it's totally frozen.
- Cut or break the yogurt bark into pieces. Store them in the freezer in an airtight container.
Recipe notes
- Yogurt bark starts melting very fast. Eat it immediately once you remove a piece from the freezer.
- This would be easy to modify the flavors by using chocolate protein powder instead of vanilla, topping the bark with sliced frozen berries, granola, or jam.
- We made a chocolate drizzle in a similar way as our chocolate covered strawberries, by combining chocolate with coconut oil. You can skip the coconut oil if you prefer.
