So, of course, we had to try it with cottage cheese too — and it turns out, it makes a crispy, crunchy, no-carb snack you’ll love!

Ingredients You’ll Need
Our easy cottage cheese chips are basically a one ingredient chips recipe but it's easy to alter the flavors by sprinkling them with your favorite seasonings.
- 1 cup low-fat cottage cheese (4% small curd preferred) - Good Culture works the best since it's higher in protein and has less moisture, but we tested this with the store brand 4% variety (Whole Foods) and it still worked well.
Cottage Cheese Chips Seasoning Ideas
We've made many batches with a variety of seasonings, here are some of our favorites you can mix and match:
- Everything bagel seasoning
- Ranch seasoning
- Shredded Parmesan cheese — makes the chips extra crispy!
- Salt and black pepper
- Garlic powder & onion powder
- Dried onion flakes - these also make the chips crisper
- Italian seasoning
- Store-bought blends — like McCormick’s Garlic Herb (so good!)
- Trader Joe’s Dill Pickle seasoning — tangy and unique
- TJ’s Chili Onion Crunch — sprinkle before baking for a spicy kick
- Tajin - for a slightly spicy lime twist
- Hot honey drizzle — a touch of sweet heat (add after baking!)
How to Make Cottage Cheese Chips in the Oven
Step 1: Prep
Set your oven to 350°F (175°C) and line a baking sheet with parchment paper. (Skip the silicone mat and foil—the chips won't crisp as well.) Make sure the cottage cheese is well drained, otherwise it'll cause the crisps to spread on the pan.
Step 2: Spoon + flatten
Drop about 1 tablespoon of cottage cheese per chip onto the parchment paper. Use the back of the spoon to gently spread into a thin circle.
Step 3: Season
Sprinkle with any seasoning you like such as everything bagel seasoning, parmesan cheese, garlic powder, dried onion flakes, smoked paprika, and any other spices or toppings you love.
Step 4: Bake
Bake for 30-35+ minutes, or until golden brown around the edges and dry in the center. Check the chips after 25 minutes and keep a close eye on them, the % of protein, how much you flatten the chips, and the cottage cheese brand can impact the cooking time.
Cooking Time Note
Our batch using Good Culture cottage cheese took 40 minutes to cook, our generic 4% brand only took 30-35 minutes.
Let the cottage cheese chips completely cool on the baking sheet to make them easier to remove. They'll continue to crisp as they cool down. Enjoy!
Storage and Reheating
- Best eaten the same day for peak crispiness.
- Store in an airtight container in the fridge for 1–2 days.
- To refresh: pop them back in the oven for a few minutes to crisp up again or air fry them on 370F.
Helpful Tips
Here are a few things that can impact your recipe results. We've made many batches of these chips to troubleshoot and fix them so they can turn out great for you on the first try!
- Oven: Most ovens are slightly off on cooking time. The best way to check this is with an inexpensive oven thermometer you just leave in your oven at all times.
- Baking rack: Make sure it's in the center. If the rack is too close to the heating element, it can cook the cottage cheese faster than it can crisp (causing burnt cheese chips). We also recommend turning the baking sheet halfway during the baking time for even cooking!
- Parchment paper: Brand matters here, some are more non-stick than others. We used Amazon parchment paper (the white parchment in photos, and it worked super well). We also used a high quality natural parchment paper that isn't as non-stick. Reynolds and Costco also make great parchment paper brands.
- Cottage cheese: I hate to say it, but Good Culture gives the best results here. It's more expensive than other brands and it's often sold out since it's higher in protein and has a richer flavor than many other brands. We made the chips with Good Culture brand and a generic grocery store 4% brand and the generic brand spread too much on the pan and the cheese burnt (it cooked way faster than GC).
- Moisure: Drain off any excess liquid in the cottage cheese starting. This helps the chips bake up crisp, not soggy and spreading. We didn't have to drain GC brand but did with any other brand we tested.
- Cooling time: Let the cottage cheese chips cool at least 10 minutes. Not only do the chips get crispier when cooled, they're easier to peel off of the parchment paper.
FAQ's
Can I use blended cottage cheese?
Yes! Blended cottage cheese work really well in this recipe, and honestly will give you an even crisper chip. Using an immersion blender to blend the cottage cheese works better than a blender.
Why are my cottage cheese chips not crispy?
Cottage cheese chips won't crisp up if there's too much moisture in the chips. Be sure to drain the cottage cheese well before making these. It's also possible the chips needed to cook longer for a crisper crunch. Adding a spinkle of parmesan cheese will also make these crispier chips.
If the chips are light colored, they will be a softer chip. Out of all of the batches we cooked, the chips that were totally brown (but not yet burnt) turned out the best crispness wise.
How do I keep my chips from burning?
Cottage cheese chips can overcook and burn quickly for a variety of reasons. The less protein in the cottage cheese, the faster they cook in the oven (meaning brand can impact results). Different seasonings can also impact the cooking time. Adding parmesan makes the chips crispy but it also causes the chisp to cook faster compared to other seasonings.
Here's a photo of our very first cottage cheese experiment! You can see how wildly different chips turned out. The burnt chips on the left used a generic cottage cheese brand and cooked faster than the chips on the right made with Good Culture brand.

Crispy Cottage Cheese Chips
Equipment

Ingredients
- 1 cup cottage cheese 4% works best
Instructions
- Preheat the oven to 350F. Line a baking tray with parchment paper.
- Drain the excess moisture from the cottage cheese by putting the cottage cheese in a strainer. Press down to help remove as much moisture as possible.
- Add ½ Tablespoon size mounds of cottage cheese to the baking sheet, spacing them out about 1-2" apart. Press down on each mound with the back of a spoon. Sprinkle on any seasoning as desired (ideas below!) You should have about 20 chips.
- Bake the cottage cheese chip for about 30 minutes or until the edges are golden brown and crisp, flipping the pan after 15-20 minutes for even cooking. If you make 1 tablespoon chips they'll take 35-40 minutes. Let them cool completely before removing them from the baking tray, they'll continue to cook and crisp as they cool down. The cottage cheese chips are best eaten the same day so they'll stay crispy and crunchy. Enjoy!
Notes

- Chip size: many recipes online use 1 tablespoon for each chip, we personally thought these were too big and cut the sise in half. If you do use a tablespoon instead, they will take a little longer to cook.
- Flavoring ideas: everything but the bagel seasoning, salt and pepper, garlic powder, dried onion flakes, Ranch seasoning mix, any store-bought favorite seasoning idea. A drizzle of hot honey at the end is great too.
- To prevent the chips from sticking to the parchment paper, let them cool completely before trying to remove them. They should peel right off at this point.
- The chips are best eaten the day you make them so they'll stay crisp.
- Use a high quality parchment paper - cheaper parchment isn't as non-stick as other brands. We used the Amazon brand parchment.
- Good Culture cottage cheese gives the best results since it has less moisture and finer curds. Make sure you use 4% cottage cheese and drain it well to minimize spreading. Good Culture cottage cheese chips do take longer to bake than other brands since it's higher protein. The store bought brand we used as a test batch took 35 minutes. So start checking your chips after 25 minutes to be on the safe side.
- Our chips were about ¼" thick and took about 45 minutes to become golden and crispy. Cooking time will vary based on your oven.
