You'll love this queso dip with cottage cheese!
When you want to serve a cheesy dip to your friends who won't know it's light, low calorie, and healthy, this is the dip to serve! This honestly even makes a great high protein lunch you can reheat in your office microwave.
By using low fat cheese and lower fat high protein cottage cheese, we're packing in tons of flavor but not the fat and calories.
What you'll need
Just 4 simple ingredients!
- 1 cup cottage cheese (226g) we used 4% fat, a little fat adds a ton of flavor.
- 1 ½ Tbsp taco seasoning (12 g) - feel free to use more if preferred. Look for brands made without sugar.
- ¼ cup fire roasted tomatoes (68 g) like Rotel brand
- ½ cup light cheddar or Mexican blend shredded cheese (48 g) we used light Mexican blend cheese that's lower in fat.
How to make cottage cheese queso in a microwave
- Blend the cottage cheese and taco seasoning together in a blender, food processor, or with an immersion blender. We used a smoothie blender cup.
- Add the cottage cheese mix to a small microwave safe bowl. Mix in the Rotel fire roasted tomatoes and half of the cheese.
- Microwave the queso dip for 1 minute and then stir. Sprinkle the remaining cheese on top and melt it for 30-40 more seconds more in the microwave.
- Serve right away with tortilla chips or veggie sticks. Enjoy!
Jenni's recipe tips
- You can thin out the dip with a little milk or plant based milk, if you want a thinner consistency.
- The entire batch serves 2 people for less than 400 calories per half of the bowl!
- Feel free to cut back on cheese if you're eating less fat than this. You could even try low fat cottage cheese, but we haven't taste tested it.

Cottage Cheese Queso
Ingredients
- 1 cup cottage cheese (226 g) 4% works better than low fat
- 1 ½ tablespoon taco seasoning (12 g) or more to taste
- ¼ cup fire roasted tomatoes (68 g) Rotel is a popular brand
- ½ cup cheddar or Mexican blend (48 g) we used light Mexican blend cheese
Instructions
- Blend the cottage cheese and the taco seasoning in a bowl with an immersion blender, in a blender or food processor.
- Transfer the ingredients to a small bowl along with the Rotel fire roasted tomatoes and half of the cheese. Microwave for 1 minute and stir. Sprinkle the remaining cheese on top and melt for 30-40 more seconds.
- Serve immediately with tortilla chips or veggie sticks. Enjoy!
Notes
- An immersion blender works better than a blender or food processor for pureeing cottage cheese, but a blender still works totally fine.
- If the dip is too thick for your blender, add a tiny bit of milk.
- To keep the fat down we used light pre-shredded cheese. Pre-shredded cheese is more likely to clump since it adds starch to the bag. Make sure to mix the cheese well to keep it from clumping or you can shred cheese yourself.
- Half of the dip is one serving. Enjoy!
