At it's core, you seriously only need 2 ingredients for this recipe..the cottage cheese and the chocolate. Adding sweetener, vanilla, or flakey sea salt are totally optional.
- Cottage Cheese – We recommend 4% milkfat for the creamiest texture and best flavor. Good Culture brand gives you extra protein (19g per ½ cup).
- Chocolate Chips or crushed chocolate making bars – Semi-sweet chips melt smoothly and taste balanced or use milk chocolate. Use Lily’s for a low carb/keto version. We don't recommend dark chocolate! It's too bitter for this recipe unless you're planning to sweeten it.
- Maple Syrup or Sweetener – Optional, but helps balance bitterness depending on your chocolate.
- Vanilla Extract – Optional - Adds depth and dessert-like flavor.
- Sea Salt – Optional - Just a pinch enhances the sweetness.
How to Make Cottage Cheese Fudge
- Melt the chocolate chips: Use a microwave or double boiler until completely smooth. We used a microwave. Add the chocolate to a small glass bowl and stir every 30 seconds, it took 1 ½ minutes to totally melt the chips in our microwave.
- Combine: Add the cottage cheese and melted chocolate to a blender, food processor, or use an immersion blender. Puree until smooth. Mix in optional ingredients during this step if you're adding any.
- Chill: Spread into a parchment-lined loaf pan, cover with plastic wrap, and freeze for 3-4 hours.
- Slice & enjoy: Cut into 10 squares and store in the freezer. You can let them defrost slightly before eating. Enjoy! These are seriously addictive!

- Texture tip: Use full-fat cottage cheese for a silky result. Non-fat can make the fudge grainy or it won't firm up as well.

- 1 cup semi-sweet or milk chocolate chocolate chips or Lily’s brand for sugar-free or keto
Instructions
- Melt the chocolate chips until smooth using a microwave or double boiler.
- Add cottage cheese to a blender and blend until completely smooth.
- Add melted chocolate, vanilla, sweetener (if using), and salt to the blender. Blend until creamy.
- Pour mixture into a parchment-lined loaf pan and smooth the top.
- Chill in the freezer for 1–2 hours or refrigerate for 4 hours.
