Our delicious low carb vanilla cheesecake fluff is a perfect dessert since it's just 5 simple ingredients and a few minutes of your time.
Creamy, dreamy, filled with fresh strawberries, and easy to customize. Keep the ingredients on hand for those times dessert cravings strike or just make it as a special weekly treat.

What is "fluff"?
When many people think of fluff, they think of sticky sugary marshmallow fluff. For our readers eating low carb, we skipped the marshmallow fluff and used quick homemade whipped cream combined with ripe fresh strawberries and a low carb sweetener to make a fluffy mousse.
Ingredients list
- Cream cheese - Take the cream cheese out at least 30 minutes to soften it.
- Heavy whipping cream Half and half will not work, you must use heavy cream or a plant based whipping cream for a vegan option. Coconut cream is another dairy free option, but I haven't worked with it before and don't know how it whips compared to heavy cream.
- Monk fruit granulated sugar substitute is the best option and makes a great 1:1 sugar substitute in recipes.
- Vanilla extract
- Strawberries - You can change up the flavor by using different kinds of low carb fruit such as raspberries, blackberries, or blueberries.

Variations
- Make a chocolate version adding cocoa powder to make a chocolate version, like we did with our Chocolate Mousse.
- Leave the strawberries out to make a vanilla cheesecake mousse.
- Add Crunch by topping the fluffy filling with toasted coconut, freeze dried berries, or sugar-free chocolate chips.

- Small clear glass dessert dishes or 4 oz mason jars
How to Make Low Carb Cheesecake Fluff
Add the heavy cream to a medium size mixing bowl and beat it with a handheld electric mixer or stand mixer for about 3-4 minutes until stiff peaks form.
In a separate bowl, mix the softened cream cheese, monk fruit, and vanilla extract until it's light and fluffy.
Fold the whipped cream into the cream cheese mixture.
Gently fold in the chopped strawberries.
Spoon or pipe into dessert dishes or small ramekins. Top with more fresh berry slices or low carb whipped cream. Enjoy!

- Eat the dessert the same day you make it for best results, it might flatten a bit if you store it for the next day.
- We like to use disposable piping bags to pipe the fluff into dessert dishes for a decorative touch, it's totally fine to spoon it into dishes to save you time.
- Soft Peaks vs Stiff Peaks: Forming soft peaks means beating the whipping cream until little cream peaks form when you pull the beaters out. The whipped cream is very light and fluffy at this point and just barely holds its shape. To create stiffer peaks, continue whipping, but be careful to not overwhip or you will create butter. - 1 teaspoon Vanilla extract
