What is a Quiche without Crust?
A quiche without a crust is called a crustless quiche. It includes all of the typical quiche ingredients yet it gets baked directly in a greased pie pan. It’s a terrific option for people who can’t eat gluten or who are eating low carb.
Crustless Quiche Recipe FAQs
If you’re crustless quiche turned soggy it either means it didn’t cook long enough or there’s too many high moisture vegetables in the quiche. A crustless quiche can also turn soggy if you cooked it on the top rack since the oven heat comes from the bottom. A quiche with a crust is less likely to turn soft on the inside since the crust helps to absorb the moisture. To fix a soggy quiche try cooking it a little bit longer to remove the excess moisture. You can also cool the quiche, put it in the fridge for a few hours and then try to heat it again in the oven.
Yes, milk can be used instead of cream in quiche, however it might not turn out as fluffy. Because you’re removing some of the fat from the recipe that gives the quiche a light and fluffy texture, we recommend replacing 1 tablespoon of milk with butter or a neutral oil.
There are two reasons why your quiche isn’t fluffy. It might not have been cooked long enough, quiche puffs up a bit before it’s done baking. The second, is that quiche gets fluffy during the baking process but after baking and while the quiche cools, it deflates a bit. This is entirely normal!
