This crustless quiche is actually one of the first low carb recipes I created when my husband started keto/low carb eating and lost 30 pounds back in 2018. It's literally the best one out there! We updated this popular post in 2025 with new tips, plus gave it a protein boost. It's only 250 calories per slice, has 3 net carbs, and 15g protein, which means you could probably eat 2 slices!

Ingredient Notes
- butter or oil - used for cooking the onion
- ham - feel free to swap turkey ham, pancetta, turkey or chicken sausage, or chicken breakfast sausage for a lighter quiche.
- sweet onion - red, white, or yellow work too
- broccoli - buy a head of broccoli or used a bag of florets. You can swap some of the broccoli for other veggies like mushrooms, bell peppers, baby spinach, cauliflower, or zucchini. You could also use our riced broccoli recipe for a finer texture.
- shredded cheddar cheese - sharp cheddar, Monterey jack, a 3 cheese blend, or gruyere Swiss are option great options. Feta would be great too but use less of it.
- large eggs - feel free to swap the eggs with ½ egg whites for a lower fat casserole
- heavy whipping cream - or blended cottage cheese
Using cottage cheese
To use cottage cheese instead of whipping cream in this recipe, you need to first blend it until smooth. It'll be a very thick consistency so we recommend adding 1-2 Tablespoons or liquid to thin it out a bit.
How to Make Crustless Ham and Broccoli Quiche
Step 1.
Prep Ingredients. Start by preheating your oven to 400°F and greasing a 9-inch round baking dish (a square one or a casserole dish works too, if that’s what you have on hand).
Step 2.
Cook the Onions. Heat a large skillet over medium heat and melt the butter. Add the diced onion and sauté for about 6–7 minutes, or until soft and lightly golden.
Step 3.
Layer the Quiche. In your greased baking dish, layer the chopped broccoli first. Next, spoon the cooked onions and diced ham evenly over the top. Sprinkle with the shredded cheddar cheese.
Step 4.
Mix the Eggs. In a separate bowl, whisk together the eggs and heavy whipping cream (or blended cottage cheese) until fully combined and smooth. Pour the egg mixture evenly over the layered ingredients in the baking dish.
Step 5.
Bake to Perfection. Bake on the center rack of your oven for 30–35 minutes, or until the center is set and the top is lightly golden.
Let it cool for a few minutes before slicing. This recipe makes 8 hearty servings—perfect for a week of low carb breakfasts or a high-protein lunch or dinner!
Recipe Tips
- Chop Ingredients Small for Even Baking. Dice the ham, broccoli, and onions into small, bite-sized pieces so they cook evenly and every slice gets a bit of everything.
- Don’t Skip the Grease. Even though there’s no crust, greasing your pan well (with butter or avocado oil spray) helps the quiche release cleanly and prevents sticking.
- Drain Excess Moisture. If using frozen broccoli, be sure to thaw and squeeze out any extra moisture with a towel to avoid a watery quiche.
- Let It Rest Before Slicing. After baking, let the quiche cool for 10 minutes before cutting—this helps it firm up for cleaner slices and better texture.
- Great for Freezing. Slice and freeze individual portions for quick, low carb breakfasts. Just reheat in the microwave or toaster oven straight from frozen.

Broccoli Ham Quiche (Crustless)
Ingredients
- 2 teaspoons butter or oil or use a non-stick skillet
- 1 cup ham chopped
- ½ cup onion diced
- 2 cups broccoli cut into bite-size pieces
- 1 cup shredded cheddar cheese not pre-shredded
- 6 large eggs ok to do ½ egg whites
- 1 cup heavy whipping cream OR blended cottage cheese see note below
Instructions
- Preheat the oven to 400F and place the oven rack in the center position. Grease a 9" size pie pan.
- Over medium heat in a medium-sized skillet, melt the butter (or add the oil). Saute the onion in the melted until soft, which takes about 4-5 minutes.
- Add the chopped broccoli florets to the bottom of pie pan, and then add the onion and ham mixture on top of that. Sprinkle with one cup of shredded cheddar cheese
- Mix the eggs and whipping cream (or blended cottage cheese) together in a small bowl and pour it over the top of the vegetable/cheese mixture.
- Bake the ham crustless quiche on the middle rack in the center of the oven for 30-35 minutes until the eggs are set. Serves 8. Enjoy cold or warm!

This is absolutely DELISH!!! I've made it MANY times and it's always a hit. I use 2 packages of Cubetti pancetta instead of ham (Trader Joe's) with sharp cheddar. I fry the pancetta first, then cook the onions in that grease. I could eat this everyday!

Hi Margie, I would swap it for another fresh veggie or you could defrost frozen broccoli. The frozen kind will have more moisture but I think it'll be ok if you pat it down with paper towels to remove as much moisture as possible. Any fresh veggie can be swapped too, even chopped spinach, bell peppers, mushrooms, etc. I hope this helps! Jen
