How many of us love sausages in the mornings but don't have time to watch over a skillet? Or maybe you're cooking a big batch for a group and want them all served at the same time?
Baking sausage patties in the oven are perfect for those times, or for even prepping breakfast sandwiches for the week! You get breakfast in no time without making a mess on your stovetop.
Our sausage recipe works great with either fresh or frozen sausages, as well as pork, chicken, or turkey varieties.
Now if you're just cooking a small batch of sausage, air frying sausage patties or links work super great and are totally hands off too.
Ingredients you'll need
You can buy sausages presliced on a tray ready to cook (the flat ones), or you can buy them in a sausage log roll and then slice them into patties. Either will work here!
- breakfast sausage patties (pre-shaped or from a sausage roll) - pork or turkey work well, as do mild or hot sausage patties. We used the Jimmy Dean brand but any of your favorite brands of sausages will work! Bob Evans, Johnsonville, Smithfield sausage patties, Tennessee Pride, Tyson, Costco, and Swaggerty sausage patties are popular brands too.
Pork breakfast sausage and ground pork are not the same thing. The breakfast variety comes pre-seasoned with herbs and spices such as sage, thyme, rosemary, garlic powder, onion powder, and paprika (and often sweetener), whereas ground pork is just unseasoned ground meat.
What about plant based varieties?
We haven't personally tested this method with plant based sausages like Impossible sausage patties or other vegan sausage patties like Morning Star sausage patties. The recipe "should" still work! Just keep a close eye on them since they could take less time to cook and again, we always recommend using a meat thermometer.
🐷 How to cook breakfast sausage
Prep. Preheat the oven to 400F. Cover a rimmed baking sheet with parchment paper or foil (not necessary, but very helpful!) or spray your baking sheet with non-stick cooking spray.
Step 1. Slice the sausage into thin flat patties if needed. Place them in a single layer on the baking sheet leaving space in between them. If they're frozen, you'll need to break them apart first.
PRO TIP: Sausage patties can shrink and form rounded disks when baking. To prevent this, press a dimple (about ¼" deep) in the center with your finger. This pushes more of the meat towards the outer edges and your sausages will bake flat.
How long to bake sausage patties?
Step 2. Bake the sausage patties in your preheated oven for a total of 18+ minutes, flipping them over around half-way through cooking (after 8-9 minutes). If you're baking frozen sausages, they'll take about 21-23 minutes to cook. Enjoy!
The safe internal temperature for eating sausage is at least 160F+. We recommend using a digital cooking thermometer to check the internal temperature.
Tips for oven cooked sausage patties
- You can also bake sausage at 375, they'll just take a little longer to cook.
- While using parchment paper or foil for your pan is not necessary, it is highly recommended as it makes clean up so much easier. Or use non-stick cooking spray.
- Browning and cooking time can vary based on your oven, your pan, the sausage, etc. If the sausage is cooked through yet you'd like it to be a little bit browner, just pop it under broil for a minute or so to get that pan fried finish!
- Leftovers will keep up to 4 days in the fridge.

- We highly recommend using a digital meat thermometer to test for doneness since all ovens can vary.
- If you're baking frozen sausages, break them apart before baking. They'll take about 21-23 minutes to cook. Due to moisture content, they might not brown as well, just broil them 1 minute to get a skillet finish.
- If you're cooking homemade breakfast patties they could be larger or thicker than the store-bought patties which come pre-shaped and will possibly take longer to cook.
