How to Make Air Fryer Thin Cut Breaded Pork Chops

Mix the breading: In a bowl, combine bread crumbs, chopped parsley, olive oil, Dijon mustard, thyme, garlic salt, and pepper.
Prep the pork chops: Pat chops dry with paper towels. This step helps them crisp.
Coat with breading: Use clean hands to press the mustard crumb mixture onto both sides of each pork chop.
Preheat the air fryer: Heat to 400°F for 5 minutes. Spray racks with cooking spray if using an oven-style air fryer (skip if your basket is nonstick).
Air fry: Place pork chops in a single layer. Cook for 10-12 minutes total, flipping halfway through.
Check doneness: Pork should reach an internal temperature of 145°F. Use a digital meat thermometer for accuracy.
Rest before serving: Let pork chops rest for 5 minutes so juices redistribute.

Recipe Tips
- Cooking time: Thin cut bone-in pork chops cook in about 10 minutes, we recommend having an inexpensive digital meat thermometer on hand so the meat only gets cooks to 145 F. Thicker cuts will take longer.
- Keto or gluten free: Swap in fresh keto bread crumbs using keto bread or gluten free bread.
- Herbs: Fresh parsley compacts a lot when chopped, you'll need nearly a full bunch for ½ cup.
- Serving ideas: Pair with roasted vegetables, mashed cauliflower, or a fresh green salad.

Mustard Crumb Breaded Pork Chops in Air Fryer
Equipment
Ingredients
- 1 cup fresh bread crumbs, minced in a food processor or dried plain bread crumbs
- ½ cup chopped fresh parsley
- ½ cup virgin olive oil
- 2 tablespoon dijon mustard
- 2 teaspoon dried thyme
- ¼ teaspoon garlic salt
- ¼ teaspoon ground black pepper
- 4 thin bone-in pork chops or boneless pork chops or cutlets
Instructions
- Mix the crumb mixture together in a medium-size bowl which includes the bread crumbs, olive oil, fresh parsley, dijon mustard, dried thyme, garlic salt, and ground black pepper.
- Dry the pork chops with a paper towel to get rid of excess moisture and to help the chops get extra crispy.
- With clean hands, pat the breading mixture on both sides of the thick cut pork chops.
- Preheat the air fryer on 400 F for 5 minutes. If you have an air fryer oven spray the aluminum rack with cooking spray, if you have an air fryer basket that's non-stick do not use cooking spray.
- Carefully add the chops to the air fryer basket. Whether you can fit 2 or 4 depends on the size of your air fryer.
- The pork chops cook for a total of 10 minutes, make sure to flip them over after 5 minutes of cooking. Use the 10 minutes as an estimate, the cooking time can vary based on YOUR model of air fryer and how fast it cooks. We highly recommend using a digital meat thermometer to cook the pork chops until they just reach 145 F.
- Let the pork chops rest for 5 minutes before cutting into them! This is essential in distributing the juices evenly.
Notes
- This recipe uses thin cut pork chops with the bone-in, if your pork chops are thicker, they'll take longer to cook. We highly recommend using a digital meat thermometer to make sure you take the pork chops out at 145 F.
- Either standard bone-in pork chops will work for this recipe or you can use french cut bone-in pork chops.
- Make the pork chops gluten free or keto by using either gluten free or keto bread crumbs
- Chopping fresh parsley compacts it down A LOT. ½ cup of chopped fresh parsley uses most of a head of parsley.
