Ingredient Notes
Shredded cabbage mix: The base of the coleslaw that provides crunch and texture. A bagged coleslaw mix is the easiest option, or you can shred green and purple cabbage yourself.
Mayonnaise: Creates the creamy dressing. Use your favorite mayo or substitute avocado oil mayo for a paleo-friendly option.
Apple cider vinegar: Adds brightness and balances the richness of the mayonnaise. White wine vinegar or red wine vinegar can also be used.
Salt: Enhances all of the flavors in the dressing and cabbage mixture.
Black pepper: Adds a subtle bite and complements the curry and bacon.
Curry powder: Gives the coleslaw its unique flavor. Mild curry powder works best, but you can use a spicier blend if preferred.
Sweetener: Balances the vinegar and curry flavors. Erythritol keeps the recipe low carb, but monk fruit sweetener also works well.
Bacon: Adds smoky flavor and crunch. Thick-cut bacon provides the best texture.
Optional garnishes: Green onions, fresh parsley, and extra bacon add color, freshness, and additional flavor before serving.
