Ingredient Notes
You truly can't go wrong with a hot crowd pleasing appetizer that only takes 4 ingredients! It does list using garlic salt as an optional item, I've been making this easy hot dip recipe for over 15 years and just added the garlic salt the first time today. So for sure don't fret if you don't have it.
unmarinated artichoke hearts - buy pre-quartered if you can, but any variety works. Marinated artichokes would also work but try to drain off as much oil as possible so it doesn't water down the recipe.
mild green chilis, diced - hot green chilis will also work if you want a spicy green chili dip.
mayo - our favorite mayo is by Primal Kitchen or Sir Kensington's since they're both paleo and low carb. Any brand will work
parmesan cheese, shredded - shredding cheese from a block will give you more of a parmesan flavor since they're often higher quality, but pre-shredded parm will work perfectly well
garlic salt, to taste (optional)
Step by Step Instructions
Preheat the oven to 375 F.
Drain the artichoke hearts and cut into bite size pieces. Note, the recipe uses unmarinated artichoke hearts that come in a can and in water, these are not the artichoke hearts in olive oil.
Drain and rinse the chopped green chilis.
Mix the chopped and drained artichoke hearts, drained and rinsed green chilis, mayo, and shredded parmesan together. Add the ¼ teaspoon garlic salt if you're using it.
Bake the hot artichoke dip on 375 F for 15+ minutes until it's hot and bubbling.
Making a Crock Pot Dip
To make this simple warm green chili dip in a crock pot is truly a piece of cake.
One must have item in your kitchen is this awesome mini crock pot (super cheap to buy too!), it truly is a must have around the holidays to make it easy to serve hot dips, fondues, or to keep smaller portions of food warm.
The directions are the same as above, except instead of baking the hot artichoke parmesan dip, you'll want to mix all ingredients, add them to your mini slow cooker and cook on low for 2-3 hours. Cook until hot and bubbling.
While cooking this in a crockpot technically takes longer than just popping it in the oven, sometimes freeing up your time right before numerous dishes are coming off the stove or from the oven at the same time, is a life saver.

To heat up the artichoke dip with green chilies just takes baking in the oven on 375 F for 15+ minutes until hot and bubbly, or heating in a mini crockpot on low for 2-3 hours until heated through and bubbling.
Is This a Low Carb & Keto Dip?
My husband started a ketogenic diet this past year and although I'd already been making this easy hot dip recipe for over 15 years, knowing this was a low carb and keto dip recipe was super exciting.
Each serving has 3.5 net carbs each when saying the keto dip has 6 servings total. While I could've probably considered this 8 servings, the reality is...it would be tough for most of us to just eat a couple bites of this delicious hot artichoke cheese dip with green chilis.

I'm looking for a keto artichoke dip recipe but of course, I already have marinated artichoke hearts. Can I rinse the oil off them & use this recipe, or do you know if it makes the dip too oily?
