Our recipe is Texas style, which means made without the beans ~ perfect for our low carb readers! We show you how to make it in a Crock Pot or on the stovetop, but tbh if you have a Crock Pot we highly recommend making that method!

What you'll need
- ground beef or ground turkey
- yellow onion - red onion, sweet, or white work too!
- bell pepper - green, red, yellow, or orange. Using frozen bell pepper slices should work too, we haven't tested it but use them in many other recipes.
- green chilis - mild or spicy
- garlic
- can of diced tomatoes (no sugar added)
- can tomato sauce (no sugar added)
- seasonings - chili powder, cayenne pepper, cumin, paprika, dried oregano, freshly, ground black pepper, fine sea salt
- bay leaves (optional)
How to cook Crockpot chili no beans
In a large pot over medium heat cook ground beef until the meat is no longer pink and is cooked through.
Add the cooked ground beef to your crockpot. Add in the diced onions, chopped bell peppers, tomatoes, tomato sauce, chili powder, cayenne pepper, oregano, black pepper, and sea salt.
Stir all ingredients to combine.
Put the lid on the crockpot and cook on high for 4 hours or low for 6-8 hours.
Serve and enjoy! Optional garnishes include cheddar cheese, sour cream, and cilantro.
How to Make Chili Recipe No Beans (Stovetop)
- In a large pot over medium heat cook ground beef until the meat is no longer pink and is cooked through. Drain most of the grease, leaving about 1 tablespoon in the pot to cook the vegetables in. Remove the ground beef from the pot and set aside.
- Saute the onion and bell peppers until soft. Add the garlic and cook 1 more minute. Scrape up any browned meat bits on the bottom of the pan.
- Mix in the tomatoes, tomato sauce, chili powder, cayenne pepper, oregano, black pepper, and sea salt. Add the meat back to the pot and combine.
- Simmer the chili for at least 30 minutes, or even longer to blend the flavors.
What's a Good Substitute for Beans in Chili?
If you ever want to make a favorite chili recipe without the beans, the best way to do so is to swap a can of beans with 2 cups of quartered mushrooms! They'll give you the bulk of beans but without the carbs!
Some people also prefer to just increase the ground beef, mix in ground pork, or even increase the tomatoes as an alternative.

Low Carb Chili Recipe Without Beans
Equipment

Ingredients
- 2 lbs ground beef or ground turkey
- 1 small yellow onion chopped
- 1 large bell pepper seeded and diced
- 1 4 oz can green chilis, mild or spicy
- 5 cloves garlic minced
- 1 15oz can diced tomatoes (no sugar added)
- 1 14.5 oz can tomato sauce (no sugar added)
- 1 ยฝ Tablespoons chili powder
- ยผ teaspoon cayenne pepper (optional)
- ยพ teaspoon dried oregano
- 1 teaspoon cumin
- 1 teaspoon paprika
- ยผ-1/2 teaspoon black pepper
- 1 teaspoon fine sea salt
- 2 dried bay leaves optional- this is a recent tweak to the recipe
- Garnishes: shredded cheddar cheese sour cream, and sliced green onions
Instructions
- Crockpot Recipe
- In a large skillet on medium heat cook ground beef until the meat is no longer pink and is cooked through. Drain the grease.
- Add the cooked ground beef to the crockpot. Add in the diced onions, chopped bell pepper, can of green chilis, tomatoes, tomato sauce, and the seasonings. Combine.
- Put the lid on the crockpot and cook on high for 4 hours or low for 6-8 hours.
- Serve and crock-pot chili with shredded cheddar cheese, sour cream, and sliced green onions. Enjoy!
- Stovetop Recipe
- In a large pot over medium heat cook ground beef until the meat is no longer pink and is cooked through. Drain most of the grease, leaving about 1 tablespoon in the pot to cook the vegetables in. Remove the ground beef and set aside.
- Cook the chopped onion and diced bell pepper in the pan the ground beef had been in and cook it until soft, which will take about 6-7 mins. Be sure to scrape up all the leftover cooked ground beef bits in with the vegetables. Add the minced garlic and cook 1 more minute.
- Mix in the green chilis, tomatoes, tomato sauce, and the seasoning. Add the ground meat and combine all ingredients.
- Simmer the chili on low until the flavors have blended, at least 30 minutes but an hour is even better if you have the time!
Notes
- If you have the time and you have a Crock Pot, we recommend that version for the best flavor. Letting all of the ingredients slow cook all day really blends the flavors together. We love the quick stovetop version too! Just let the chili simmer for as long as you're able to but for at least 30 minutes.
- Mixing in 8 oz of quartered mushrooms is a great option, they fill in nicely for a can of beans.
- The seasonings were changed slightly December 10, 2024 by adding in cumin, paprika, and bay leaves, doubling the dried oregano, and slightly decreasing the chili powder.

We make our chili with black soy beans. They are much lower in carbs than other beans and makes the recipe taste closer to the non-keto ones.
