Ingredients list

- Carrots - Finely shredded carrots. Shred them easily using a box grater.
- Cauliflower - Cauliflower will need to be riced before preparing your nuggets. For easy prep, buy pre-riced cauliflower frozen.
- Egg - Egg is used as a binder to hold the ingredients together.
- Spices - A yummy combination of salt, pepper, paprika, onion powder, and dried parsley. If you love garlic, add garlic powder.
- Plain breadcrumbs - Panko breadcrumbs are a great option for a lighter texture.

How to make homemade air fryer chicken nuggets
Preheat your air fryer to 400 degrees Fahrenheit.
In a mixing bowl, combine ground chicken, carrots, riced cauliflower, egg, salt (ยผ teaspoon), paprika, and onion powder. Set aside.
In a small bowl, mix the breadcrumbs, salt (ยฝ teaspoon), black pepper, and dry parsley.
Wet your hands to prevent sticking and form nuggets with the chicken mixture (about 1 tablespoon of chicken for each chicken piece) then roll in the breadcrumb mixture. Place on parchment paper and repeat until all nuggets are formed.
Place nuggets directly in the air fryer basket and air fry chicken nuggets for 5 minutes. Using caution, flip the nuggets over and air fry for an additional 5 minutes, or until the juices run clear. Allow air fryer nuggets to cool slightly before serving.
Recipe notes
- These can be baked in the oven at 400 degrees F for 15-20 minutes, flipping them halfway through the cooking time.
- Why not double the recipe and freeze them for later?
- Leftovers will keep in the fridge up to 4-5 days. Reheat them in the air fryer for 3-5 minutes on 400 F or until heated through.
- Don't overcrowd the air fryer or they might not brown, cook them in batches if needed.
- You can spritz the shaped nuggets with an olive oil spray if preferred, this will make them extra crispy.
