What’s even better, this simple and flavorful healthy side dish or works with just about any meal. Sometimes we like to cook it even longer to make it so crisp that they’re almost like chips. The dark brown crispy bits are always my favorite, and they’re usually gone before they even hit the dinner table.
The best roasted broccoli isn’t just cooked until it’s done, it’s cooked until it’s starting to caramelized and crisp...but not to the point it gets over cooked and starts getting burnt.
You could also add Parmesan cheese in the last five minutes or cooking or even add a pinch of cayenne pepper if you want to kick it up a notch. We absolutely love this addicted oven roasted broccoli whether it's covered in parmesan or just with savory garlic and herbs.
If you don’t have Italian seasoning in your cupboard, don’t fret. I’ve made this many times just using whatever combination of flavorful herbs I have in the cupboard. Rosemary, oregano, basil, thyme or just straight up with garlic, salt and pepper tastes amazing.
Oven Roasted Broccoli Ingredients
1 head of broccoli, cut into pieces
1-2 teaspoon minced garlic cloves (we're garlic lovers so add 2)
3T olive oil
1 teaspoon Italian seasoning
½ teaspoon salt
¼ teaspoon ground pepper
2 T shredded Parmesan (optional)

Easy Baked Broccoli in Oven Steps
Preheat oven to 375 and line a baking sheet with parchment paper. We love to cook with parchment paper since it makes for easy clean-up and saves our pans.
Cut the broccoli into pieces. Here's a photo of the broccoli pieces size we cut our broccoli into so you have a size reference. To speed things up you could buy prepacked, washed and cut broccoli too.
In a medium-size bowl mix the minced garlic cloves, olive oil, Italian seasoning, salt and pepper.
One way to jazz this recipe up even more is by cooking with flavored sea salts. It's amazing how a little bit of flavored salt can go a long way.
Add the broccoli pieces to the garlic herb mixture and combine.
I’m going to give you a little lazy person tip, sometimes I’ll just put the broccoli directly on the baking pan and I will drizzle the oil and seasoning over the top and put it in the oven as is. But when you take the extra minute to mix it all together in a bowl, the oil and spices do a better job of distributing the flavor.
With a spatula or slotted spoon spread the garlic broccoli out on a parchment lined baking sheet.
Bake the oven roasted broccoli for 10 minutes and with a spatula, and then flip the broccoli. Some parts might be starting to get dark brown, and that's totally ok because there's where the delicious caramelized flavor comes from.
Put back in the oven for 10 minutes or until cooked through, or your desired degree of doneness.
They’re technically cooked after about 15 minutes in the oven, but to make caramelized and crispy you’ll want to put them in about a total of 20 minutes.
Parmesan Broccoli is JUST as amazing!!
Straight up roasted garlic herb broccoli is devine, but making parmesan broccoli is so delicious too! If you're like my husband following a keto diet, adding the extra fat from the cheese makes this amazing as a keto broccoli recipe too.
If you decide to add shredded parmesan cheese, you simply need to add how much is to your liking in the last 3-5 minutes of baking the oven roasted broccoli.
A Side Note.....How do YOU spell broccoli?
Funny story, broccoli is one of those words I've always struggled to spell correctly. Maybe that makes sense since how to spell broccoli is apparently one of the most commonly misspelled words in the English language. Is this a word you often mix up, or is it just me?
But I've always found this a little humorous since it's my favorite vegetable an all,.When I was younger I commonly spelled it brocolli. Other ways people often spell broccoli is brocoli, brocolli, or broculi. Who knew? So if you too have wondered how do you spell broccoli, now you know 😉

Oven Roasted Broccoli with Garlic and Herbs (Paleo Keto Broccoli)
Equipment
Ingredients
- 1 1 head of broccoli cut into pieces
- 1-2 teaspoon minced garlic
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon ground pepper
- 3 T olive oil
- 2 T shredded parmesan optional
Instructions
- Preheat the oven to 375 and position the rack to the center
- Cover the baking pan with parchment paper
- Cut the broccoli and set aside
- Add the minced garlic, Italian seasoning, salt, pepper and olive oil to a medium sized bowl and mix well
- Add the broccoli to the herb mixture and make sure to cover and distribute evenly
- Remove the garlic herb broccoli with a spatula or slotted spoon and spread out on the baking sheet
- Cook for 10 minutes and then flip the broccoli. Cook for 10 minutes more.
- If you're adding parmesan cheese, add to the oven roasted broccoli with 3-5 minutes left on the timer.
- Serve immediately and enjoy!
