Using a pressure cooker is the ultimate time saver around the holidays. All you need to do is cook thinly sliced layered potatoes for 1 minute under pressure to make your family favorite au gratin or scalloped potatoes recipe.

What you'll need
- 3-5 lbs of Yukon Gold or red potatoes (peeled). We don't recommend Russet potatoes for this recipe since they're so starchy. They'll fall apart instead of holding their shape.
- 1 cup liquid - water, chicken broth, or vegetable broth
Cooking sliced potatoes in an Instant Pot
- Peel then slice your potatoes into ยผ" slices. Using a mandoline isn't essential but they sure are helpful for making perfect potato slices.
- Add the liquid to the bottom of the pressure cooker. Insert a vegetable steamer basket.
- Place the sliced potatoes in the basket.
- Put the lid on the pot and close the pressure cooker valve.
- Pressure cook the potatoes on high for 1 minute, then do a quick release of the remaining pressure.
- Carefully remove the potatoes with a slotted spoon and use them in your favorite recipe.
Jenni's tips
- The potato slices will be very very soft. They won't hold their shape as well as baking raw slices in an au gratin, but honestly, for that type of recipe it doesn't really matter.
- You can leave the peel on but we made ours without the peel.
- You could follow this recipe for making mashed potatoes too, although it might be easier to cook cubed potatoes for that method instead.

Sliced Potatoes in a Pressure Cooker

- 3-5 lbs Yukon Gold potatoes sliced into ยผ"
- 1 cup liquid water or broth
Instructions
- Add 1 cup of water or broth to an Instant Pot. Add the sliced potatoes.
- Cook the potatoes on Manual High for 1 minute (some units call this Pressure Cook). Do a Quick Release of the pressure once the potatoes are done.
- Remove the potatoes with a slotted spoon and use them in your recipe as desired. There might be a little liquid left in the bottom of the pot, most of it absorbs into the potatoes.
Notes
- Cooking sliced potatoes is great for making scalloped potatoes or au gratin potatoes.
- You can transfer the potatoes to a dish and make your sauce right in the pressure cooker pot instead of dirtying a dish on the stovetop. Bake or broil as desired.
- We don't recommend using Russet potatoes since they're so starchy and could totally fall apart during cooking.
