Add 1 cup of water or broth to an Instant Pot. Add the sliced potatoes.
Cook the potatoes on Manual High for 1 minute (some units call this Pressure Cook). Do a Quick Release of the pressure once the potatoes are done.
Remove the potatoes with a slotted spoon and use them in your recipe as desired. There might be a little liquid left in the bottom of the pot, most of it absorbs into the potatoes.
Notes
Cooking sliced potatoes is great for making scalloped potatoes or au gratin potatoes.
You can transfer the potatoes to a dish and make your sauce right in the pressure cooker pot instead of dirtying a dish on the stovetop. Bake or broil as desired.
We don't recommend using Russet potatoes since they're so starchy and could totally fall apart during cooking.
