High protein breakfast casseroles are how I get a real breakfast on the table without cooking every single morning. mix one up the night before (or bake it on Sunday), and breakfast is handled for days.
Every recipe here has at least 15g of protein per serving. I kept them on the lighter side, so you'll find egg white bakes, cottage cheese casseroles, crustless quiches and even a few sweet ones.

They're just as good for weekday meal prep as they are for Christmas morning, when you have a house full of people.

Why I Build My Breakfast Around Protein
For years, my kitchen was all about low carb. My husband started keto in 2018, and that's when I started developing low carb and keto recipes. Then in fall 2023, a trainer taught me how important protein is, and it changed the way I cook. These days I focus on high protein, macro friendly meals, and breakfast is where my day starts.
A breakfast casserole is one of the easiest ways I've found to start the day with protein. I put it together the night before, slide it in the oven in the morning, and there's enough for everyone.
It's a Christmas tradition for me, too. My mom always made a classic ham and cheddar breakfast casserole on Christmas morning. My sister and I were allowed to open our stockings as soon as we woke up, but the gifts had to wait until she made the breakfast casserole.
Such a painful wait as a kid! And before any gift opening could happen, she made my sister and me wash the dishes. The casseroles in this list are lighter, higher protein takes on that same make-ahead idea.
How to Boost the Protein in Any Breakfast Casserole
You can make almost any breakfast casserole more filling with a few easy swaps:
- Swap some of the eggs for egg whites. Liquid egg whites add protein without much extra fat.
- Add cottage cheese. Stir it right into the eggs. It melts in and makes the casserole creamy. Cottage cheese is my secret in a lot of these recipes, and you'll find even more ideas in my 25 Cottage Cheese Breakfast Recipes.
- Use leaner meat. Chicken or turkey sausage, lean ground turkey, ham or smoked salmon all add protein and keep the fat in check.
- Whisk in Greek yogurt. Plain Greek yogurt adds protein and a little tang in place of some of the milk or cream.
- Go easy on the cheese. A little sharp cheese goes a long way, so you get the flavor without making it a high fat dish.
To make it work for the whole family, serve the casserole with fruit, toast or roasted potatoes on the side for anyone who wants more carbs, and let everyone add their own salsa or hot sauce.

Make Ahead and Freezer Tips for Breakfast Casseroles
- Night before: Assemble the casserole, cover it tightly and refrigerate. In the morning, let it sit on the counter while the oven heats, then bake. It may need a few extra minutes since it's starting cold.
- Bake ahead: Bake it fully, let it cool, then cut it into squares and store them in airtight containers in the fridge for 3 to 4 days.
- Freezer: Wrap cooled squares individually, put them in a freezer bag and freeze for up to 2 to 3 months. Thaw overnight in the fridge before reheating.
- Reheat: Warm single squares in the microwave at 50% power, or reheat a larger piece covered with foil in a 350°F oven so it doesn't dry out.
- Check each recipe's notes, since some bakes (like the French toast and pancake casseroles) do better made the day before than frozen.
