Roasted Sweet Potato Slices (Savory or Sweet)
If you're either not a fan of sweet potato casserole OR you're looking to lighten up your holiday table, our roasted sweet potato rounds with maple syrup and cinnamon will be a hit! They seriously take just like sweet potato casserole.
As written, the recipe is Whole30, paleo, gluten-free, vegan, and refined sugar free.

- sweet potatoes, peeled and cut - we used red garnett, other varieties will work as well. You can also use the light colored yams, they have a milder flavor than sweet potatoes.
- coconut oil, melted - other oils can be used such as extra virgin olive oil or avocado oil
- maple syrup - honey, brown sugar, or a low carb substitute such as golden monk fruit or erythritol can be used to make sweetened roasted sweet potato slices.
- fine sea salt or kosher salt
- ground cinnamon

Variations
Savory roasted sweet potato slices- Skip the maple and cinnamon. Toss the sweet potato slices with olive oil, cumin, paprika, salt, and pepper.
Cubes instead of rounds - Instead of making potato slices, fit more on the pan by cutting them into 1" cubes.
Step by Step Instructions
Prep Ingredients
- Preheat the oven to 375 degrees F (190 degrees C) and cover a large baking sheet with parchment paper (optional but it makes for easy clean-up).
- Place the ½" peeled and sliced sweet potato rounds on the baking sheet and mound them together in the center. Drizzle the melted coconut oil, maple syrup, salt, and cinnamon over the top of the sweet potatoes. Toss to combine right on the pan.
- Spread the sweet potatoes in a single layer on the baking sheet.
Cook
- Bake the sweet potato slices for 20+ minutes, or until they are tender. Sprinkle with a little more cinnamon and salt before serving. Enjoy!

- We used a large sheet pan (include size) and 1 ½ lb ½" sweet potato slices fit when placed in a single layer, if you're using up to 1" thick slices you can cook a higher weight, they'll take longer to cook. If you have odd sized sweet potatoes can cut the very large ones in half.
