Preheat the oven to 375 degrees F (190 degrees C) and cover a large baking sheet with parchment paper (optional but it makes for easy clean-up).
Place the ½" peeled and sliced sweet potato rounds on the baking sheet, and mound them together in the center. Drizzle the melted coconut oil, maple syrup, salt, and cinnamon over the top of the sweet potatoes. Toss to combine right on the pan.
Spread the sweet potatoes in a single layer on the baking sheet.
Bake the sweet potato slices for 20+ minutes, or until they are tender. Sprinkle with a little more cinnamon and salt before serving.
Notes
We used a large sheet pan (include size) and 1 ½ lb ½" sweet potato slices fit when placed in a single layer, if you're using up to 1" thick slices you can cook a higher weight, they'll take longer to cook. If you have odd sized sweet potatoes can cut the very large ones in half.Savory option - skip the maple and cinnamon. Toss with cumin, paprika, salt, pepper. Adjust quantity per air fryer recipe that used ½ lb sweet potatoes. Cut back pepper to ⅛".You can cut back on oil and maple syrup to create more of a "weeknight" dish instead of holiday dish.This same process can be used for baking sweet potato cubes!
