Smoked bacon meatball onion bombs
Is it a giant meatball or is it a bacon wrapped round burger? This is a Traeger grill recipe, but I'd like to think it can be baked too if you don't have one!

So many people have asked us for a low carb version of this recipe, we're sharing it here with keto friendly modifications right here in the post.
Ingredients
- 2 yellow onions
- 1 lb ground beef (80/20)
- ¼ cup diced yellow onion
- ¼ cup chopped fresh parsley
- ¼ cup chopped mushrooms
- 1 tablespoon spicy ketchup (or regular sugar-free)
- 1 teaspoon soy sauce (or tamari or coconut aminos)
- 1 teaspoon Worcestershire sauce
- 1 tablespoon monk fruit golden sweetener (or other sweetener)
- 1 tablespoon steak seasoning rub
- ¼ cup low carb breadcrumbs
- 1 lb bacon
- BBQ sauce to taste
Recipe steps
- Set the smoker grill temperature to 225F and pre-heat the unit with the lid closed. This will take about 10-15 minutes.
- Cut the tops and bottoms off of the onions and get rid of the tough outside skin. Slice the onions in half and start peeling the layers apart. Set aside.
- In a large bowl add the ground beef, diced onion, parsley, mushrooms, diced onion, ketchup, soy sauce, Worcestershire Sauce, sweetener, steak rub, and low carb bread crumbs. Combine the meat mix with your hands.
- Take a small handful of the meat mix and put it inside one of the onion layers. Press another piece on top of the mix to form an onion sealed meatball. Continue with the rest of the layers until the meatloaf is gone. How many you can make depends on how big (or small) your onions are.
- Wrap about 3 slices of bacon around each meatball. Secure the bacon with toothpicks so it doesn't unravel during cooking. Place the large meatballs on the grill grates.
- Smoke for 1 hour on the Traeger at 225 ˚F / 107 ˚C Super Smoke.
- Increase the unit temperature to 350 ˚F / 177 ˚and cook them for another 20-30 minutes or until the internal temperature is around 160F. About 10 minutes before they'll be ready, brush them with your favorite BBQ sauce and caramelize them. Remove from grill (once they reach 160F) and allow them to rest for 5-10 minutes before serving.
