Ingredients
- coconut oil - other types of oil such as canola oil or extra virgin olive oil will work also
- onion - thinly sliced
- garlic cloves - minced
- mushrooms - the recipe uses crimini but sliced button mushrooms or any variety of mushrooms will work
- seasoning- salt, pepper, Dijon mustard
- shaved beef or stir fry meat - thinly sliced steak works too or we show you how to add ground beef below. You can also use sliced ribeye steak.
- canned coconut milk - this is NOT coconut beverage, but unsweetened coconut milk
- optional garnish- cilantro
How to Cook Easy Low Carb Beef Stroganoff
Step 1: Melt the coconut oil in a large skillet over medium heat. Add the sliced onions and sauté for about 5 minutes until softened and slightly golden.
Step 2: Add the sliced mushrooms and cook for 3 to 5 minutes until they begin to release moisture and soften. Stir in the salt, pepper, and Dijon mustard so the flavors coat the vegetables evenly.

Step 3: Increase the heat to medium high and add the shaved beef to the same pan. Cook for about 5 minutes until the beef is fully cooked.
***NOTE: If you're substituting ground beef for the shaved beef/stir fry meat and making ground beef stroganoff, you'll want to cook the ground beef in a separate pan before this step. Drain the grease and then add it to this easy beef stroganoff recipe at this point.
Step 4: Reduce the heat to medium low, stir in the coconut milk, and simmer for another 2-3 minutes until everything is heated through and slightly thickened.
What to Serve with Beef Stroganoff
Serve this keto friendly beef stroganoff over cauliflower rice, regular rice, egg noodles, rice noodles, gnocchi, zucchini noodles, or roasted vegetables.
Storage and Freezing
Storage: Store leftovers in an airtight container in the refrigerator for up to 4 days.
Freezing: Let the stroganoff cool completely, then freeze in freezer safe containers for up to 2 months.
Reheating: Reheat gently on the stovetop over medium low heat or microwave until warmed through. Stir well to maintain a creamy texture.

Easy Keto Beef Stroganoff Recipe
Ingredients
- 1 1 lb shaved beef or stir fry beef
- 1 T coconut oil
- 1 large onion thinly sliced
- 1 lb sliced mushrooms button or crimini
- ¾ teaspoon salt
- ½ teaspoon pepper
- ¼ teaspoon dijon mustard
- ¾ c canned coconut milk
Instructions
- Melt the coconut oil in a large pan on the stovetop on medium heat
- Saute the onions for 5 minutes in the coconut oil
- Add the sliced mushrooms and cook 3-5 minutes until they start to soften
- Stir in the salt, pepper and dijon mustard
- Turn up the heat to medium high and add the shaved beef to the same pan as the vegetables. Cook for 5 minutes until the meat is cooked through. If you're using stir fry beef it could take a little longer than 5 minutes.
- Turn the heat down to medium low and add the coconut milk to the beef and vegetable mixture.
- Simmer 5 additional minutes until all of the ingredients are heated through. Serve and enjoy!
