Ingredients You’ll Need
- lean ground beef - we used 93%/7% fat to keep these a little ligher
- 6" flour tortillas - any brand will work. We used the Misson Carb Balance which are low carb and high fiber (but taste just like a regular flour tortilla)
- Salt and pepper
- American cheese, thin cheddar cheese slices, or shredded cheddar. American cheese is the classic Big Mac option, but cheddar cheese or light cheddar cheese are healthier alternatives.
- iceberg lettuce
- sweet onion
- dill pickles
- Everything bagel seasoning or sesame seeds (optional)
- 2 batches homemade Big Mac sauce or use a store-bought special sauce (our favorite healthier sauce brand)
- High heat oil such as avocado oil or grapeseed oil
Equipment and Tools
- A Blackstone or flattop griddle (or use an indoor griddle pan or indoor electric griddle). The model we have>>
- A burger press or a flat dish for pressing
- Large spatula
How to Make Blackstone Smash Tacos
1. Preheat the Griddle
Preheat your Blackstone griddle to medium-high heat (about 400°F). Lightly grease the surface with a high heat cooking oil, we usually use avocado oil.
2. Form the Beef Patties
Divide the ground beef into 12 equal-sized balls (around 2.5 oz each).
3. Smash the Beef Onto Tortillas
Spread the tortillas on baking sheets. Using clean hands or a burger press, spread the ground beef balls on the tortillas until they almost reach the edge. Season with salt and pepper. Set aside and prep the entire batch.
4. Cook the Smash Tacos
Place the beef tortillas beef-side down for about 2–3 minutes, until browned and mostly cooked through.
Flip the tacos so the tortilla side is down, and reduce the heat to medium-low.
5. Melt the Cheese
Top each smashed patty with a slice of cheese or shredded cheese. Cover with a melting dome or metal bowl for 1–2 minutes to melt the cheese. You'll want to work quickly since this is a quick cooking recipe. Set the finished ones aside as you work.
6. Add Toppings & Serve
Remove the tacos from the griddle and top with:
- Shredded lettuce
- Minced onion
- Pickle slices
- A drizzle of Big Mac sauce
- Optional: Sprinkle of everything bagel seasoning or sesame seeds
Serve hot and enjoy!
Recipe Tips
- Tortilla Options: Any 6” flour tortilla works. For a lower carb option, we often use Mission Carb Balance. You could even make these smaller and use street tacos.
- Cheese Swaps: American cheese melts best, but cheddar or Colby Jack also work well. Thinly sliced cheese works the best or even using shredded cheddar cheese.
- Meal Prep Tip: Cook the smash tacos in batches in advance and reheat on the griddle or skillet.
- Nutrition will vary based on tortilla brand, cheese used, and sauce quantity. For the lowest carbs, use low carb tortillas and skip the sesame topping.
FAQs
Can I use a cast iron pan instead of a Blackstone?
Yes! Use a large cast iron skillet over medium-high heat and cook in batches. Press the beef onto the tortillas just like you would on the griddle. You can also half the ingredients list and make a smaller portion on an indoor griddle pan
Do I have to use American cheese?
No, absolutely not. It does melt the best for that classic Big Mac texture and taste. Shredded cheddar, Colby Jack, or pepper jack also work great and are healthier more natural options.
Can I use ground turkey or chicken?
Yes, you can totally use ground turkey or ground chicken for this recipe. We don't recommend the 99% lean proteins since they're more likely to stick.

Big Mac Tacos (Blackstone Griddle Recipe)
Equipment
- Blackstone or Flat Top Griddle or even an indoor griddle
- Burger press or dish for flattening the burgers
Ingredients
- 2 lbs lean ground beef 93% lean
- 12 small 6-inch flour tortillas
- Salt and pepper to taste
- 12 slices American cheese thin sliced cheddar cheese or 1 cup shredded cheddar
- 4 cups shredded iceberg lettuce
- 1 cup minced sweet onion
- 3-4 dill pickles thinly sliced
- 2 batches homemade Big Mac Sauce see note below, or store-bought "special burger sauce"
- Avocado oil
- Optional: Everything bagel seasoning or sesame seeds
Instructions
- Preheat your Blackstone griddle to medium-high heat (around 400°F). Lightly grease the surface with a high heat cooking oil like avocado oil.
- Divide the ground beef into 12 equal-sized balls (about 2.5 oz each). Smash the balls of meat onto 12 tortillas, either with a burger press or with clean hands. Season with salt and pepper.
- Place a tortilla on the griddle with the beef side down, lightly press down into the griddle. and immediately press a beef ball onto the center. Let the beef cook beef-side down for 2–3 minutes until browned and nearly cooked through.
- Flip so the tortilla is on the griddle and the hamburger meat is facing up. Lower the heat slightly to medium-low.
- Top each beef patty with a thin slice of cheese. Cover with a melting dome or bowl and cook for 1–2 minutes, until cheese is fully melted.
- Remove from the griddle and top each taco with shredded lettuce, onion, pickles, and Big Mac sauce. Sprinkle with everything bagel seasoning or sesame seeds if desired. Serve hot!
Notes
- If you don't want to make your own Big Mac sauce, you can use store bought Thousand Island dressing, burger sauce, or special sauce.
- We have a healthy Big Mac sauce recipe and a classic burger sauce recipe (made without sugar).
- You can cut this recipe in half and use an indoor griddle or griddle pan too.
- To meal prep in advance, precook the meat patties onto the tortillas and give them a quick reheat right before serving.
- Low carb: you can make this a lighter recipe by using Mission Carb Balance tortillas or a sugar-free burger sauce.
- We allowed a very generous 2 tablespoon of Big Mac sauce, feel free to use less!
