I rounded up 20 cottage cheese breads, from soft dinner rolls, bagels and cinnamon rolls made with flour to low carb cloud bread, chaffles and crackers with no flour at all.
Most have short ingredient lists. My crispy cottage cheese chips need just one ingredient, the bagels need two, and several are ready in 30 minutes or less.

Bake them for breakfast, lunch sandwiches, pizza night or an easy snack, with low carb and classic options for each.

Why I Bake with Cottage Cheese
There's always a tub of cottage cheese in my fridge. I eat it plain to boost the protein in my meals, and I blend it to make sauces creamy.
I bake with it for two reasons. It adds protein, and it cuts the fat in many recipes when it takes the place of sour cream, whole milk, heavy cream or butter.
I've been developing low carb recipes since my husband started keto in 2018. That's why 8 of these 20 breads are low carb, with no wheat flour.
How Much Protein Is in Cottage Cheese Bread?
It depends on the recipe and how much cottage cheese goes in. Half a cup of 4% cottage cheese has about 13 grams of protein, and that gets spread across the whole batch.
On this list, protein runs from 3g in one cracker to 18g in a serving of the soft pretzels.
The highest protein picks are the soft pretzels (18g), my Cottage Cheese Flatbread (14.5g), my Crispy Cottage Cheese Chips (13g) and the cinnamon rolls (12g).
How to Make Cottage Cheese Breads Turn Out Right
- Drain it. Extra liquid makes a wet, gummy batter, so pour off any liquid sitting on top of the cottage cheese.
- Blend it for soft breads. Dinner rolls and cinnamon rolls call for cottage cheese blended completely smooth.
- Use small curd when the recipe calls for it, like the 2 ingredient bagels.
- Let loaves cool all the way. Cottage cheese loaves slice cleaner once they've cooled completely.
- Good Culture makes the highest protein cottage cheese on the market (but it's also the highest price). Daisy brand and Whole Foods make a great alternative to keep the cost down, and they still provide a good amount of protein per serving.
With Flour or Without?
The recipes with flour taste like classic bread, rolls and bagels. Many use baking powder or self-rising flour instead of yeast, so there's no rising time.
The low carb ones swap the flour for eggs, almond flour or coconut flour. They're softer, more like a wrap, muffin or chaffle.
Making bread for the whole family? Bake a batch of rolls or bagels for everyone, and keep the cloud bread or chaffles for anyone cutting carbs. Same fillings, two kinds of bread.

Cottage Cheese Breads FAQs
Can you bake with cottage cheese?
Yes. It works in yeast rolls, quick breads, bagels, biscuits and even crackers. Blend it smooth for soft breads like rolls, or use small curd when a recipe calls for it.
Does cottage cheese bread taste like cottage cheese?
Not much. Once it's mixed into the dough and baked, you get a mild bread. The flavor comes from add-ins like everything bagel seasoning, garlic, rosemary or cheddar.
Which cottage cheese breads are low carb?
The cloud bread, chaffles, crackers, coconut flour biscuits, 90 second English muffin, almond flour bread, my Cottage Cheese Flatbread and my Crispy Cottage Cheese Chips are all made without wheat flour.
Can I make cottage cheese bread without flour?
Yes. The low carb recipes above use eggs, almond flour or coconut flour, and the Flourless Cottage Cheese Bread Loaf uses rolled oats.
What kind of cottage cheese is best for baking?
Use the kind the recipe calls for. Small curd mixes in more easily, and draining off the liquid on top keeps the batter from getting too wet.
It's a Whole Lotta Yum!
