Easy keto friendly and sugar-free chocolate covered almonds sprinkled with sea salt that are a healthy way to enjoy a sweet treat or snack. Make them in clusters or as individual keto chocolate almonds, either way they'll become a favorite!
Cover a large baking sheet with parchment paper or foil.
Break the 2 keto friendly dark chocolate baking bars into large chunks. Add the pieces to a small glass mixing bowl.
Microwave the chocolate in 30 second increments, stirring the chocolate after each time. Keep doing this until the chocolate is completely melted.
Add the almonds and the sweetener to the melted chocolate and stir until completely combined.
With a small cookie scoop or spoon, group the sugar free chocolate covered almonds into small mounds and place them on the baking sheet. Instead of making keto chocolate clusters, you can also make individual chocolate covered almonds by laying them one almond at a time on the baking sheet.
To speed up hardening the chocolate, place the cookie sheet in the fridge for an hour.
The healthy chocolate covered almonds do not require refrigeration, but the fridge is still the best place to store the candy so it doesn't melt.

Use toasted unsalted almonds to make the recipe go even quicker, if you only have raw almonds you'll want to toast them in the oven before proceeding. Preheat the oven to 300°F. Line a large baking sheet with parchment paper or a silicone baking mat. Spread almonds out in a single layer and toast for 10-12 minutes, stirring once during that time. Set aside.We used Lily's dark chocolate baking bars in our recipe, sugar-free chocolate chips or semi-sweet chocolate will also work.The recipe as written uses just a teaspoon of sweetener, after you combine the chocolate and nuts together, taste one and add more sweetener to taste.For a really decadent treat, use the Lily's flavored chocolate bars like the caramel chocolate. These are presweetened so no additional sweetener is necessary in the recipe. You'd just need to melt the flavored bars and nuts, combine together and chill.To make individual keto chocolate covered almonds, lay the almonds one by one on a baking tray and chill them without grouping them into clumps.
