An easy one dish sausage potatoes and green beans recipe baked in the oven! You'll love this hearty one pan dinner with smoked sausage like kielbasa or any type of precooked sausage.
Preheat the oven to 375℉. Cut the smoked sausage into approximately ½” thick slices.
Cut the potatoes in half. If there are large pieces, cut in half again so that they are all about the same size. Quarter the onion and cut it into thin slices. Clean the green beans and cut off any attached stems.
Place the sausage, green beans, potatoes, and onions into a 9x13” baking dish. You can spread the ingredients out on a rimmed baking sheet if you want crisper browned veggies. Using a 9x13 pan gives a softer texture.
In a small bowl, mix together the olive oil, garlic, Italian seasoning, ground mustard, salt, and pepper.
Pour the olive oil mixture over the sausage, green beans, potatoes, and onions then toss to coat them evenly.
Bake in the oven for 40-50 minutes or until the potatoes are cooked through and tender. Stir the ingredients halfway through to ensure even baking.
If the green beans start to brown too much, you can cover the dish with foil and finish baking.
Serve this casserole warm and garnish with fresh parsley. Enjoy!
Notes
Baking the casserole in a 9x13 pan gives it more of a softer casserole-like consistency. If you want to crisp up the ingredients, spread everything out on a sheet pan instead!
