Salad Ingredients
1lbcooked chicken (454g)about 1 ¼+ raw chicken if you're cooking it first
16ozbag frozen corn roasted or regular (454g)defrosted
1large red bell pepper (154g)or diced tomatoes - peppers adds a crunch and peppery bite, tomatoes have a milder softer texture
¼cupdiced red onion (28g)
½cupcrumbled cotija cheese (60g)
3tablespoonchopped fresh cilantro
Optional garnish ideas - Tajin seasoning or chili powder for a kickcilantro, Cotija cheese, lime wedges
Instructions
Make the dressing by combining the Greek yogurt, light mayonnaise, lime juice, chili powder, paprika, and salt. Set it aside.
In a large bowl, add the shredded chicken, defrosted corn, diced bell peppers, chopped red onion, chopped cilantro, and cotija cheese.
Pour the Mexican street corn salad dressing over the top. Toss the salad to combine everything together.
Garnish with more cilantro, avocado cubes, sliced radishes, cotija cheese, jalapeno, or Tajin seasoning.
Enjoy! Serve the salad cold or at room temperature.

We put adding sweetener to the dressing as an optional ingredient. Nonfat Greek yogurt sometimes has a bit of a tart bite, plus brands can vary. Combine the dressing and add a couple of drops of stevia extract or your preferred sweetener if you think it's needed.The salad was intentionally left on the milder side. Feel free to add a fresh diced jalapeno or more chili powder to the dressing to take things up in heat. We love sprinkling Tajin seasoning before serving. It's a Mexican chili pepper lime spice blend that everyone should have in their cupboard!
