Cooking homemade low carb Swedish meatballs is easy and gets on the table in just 35 minutes! Bake the beef and Italian sausage meatballs while the sauce simmers on the stovetop for a savory dinner or for your holiday table.
3Tcream cheesemelted in the microwave for about 20 seconds.
1cbeef broth
1cheavy whipping cream
¼teaspoonpepper
¼teaspoonsalt or to taste
Instructions
Using a large mixing bowl, combine both meats with the almond flour, finely chopped onions, parsley, garlic salt, pepper and nutmeg.
While, according to my grandma, mixing ground meats with your clean hands works best, if that isn't your style, using a mixer on low setting works even better!
Once the meats and remaining meatball ingredients are combined, roll them into 1.5 inch balls and space evenly apart on a parchment lined baking sheet.
In an oven that was preheated to 425, bake the meatballs on the center rack for 18-20 minutes.
While the meatballs are baking, add the ingredients to a large pan and simmer the ingredients. I'd recommend starting the sauce 10-15 minutes into the baking time since it'll heat up quickly.
Once the meatballs are done fully cooking in the oven, carefully add the meatballs to the low carb cream sauce and simmer until all is heated through and the sauce is lightly bubbling.
Serve the low carb Swedish meatballs with a chopped parsley garnish. Enjoy!
