Make fun, healthy, and easy Halloween deviled eggs for spooky season! Whether you're in the mood for cute pumpkins, scary spiders, or deviled devils, Halloween eggs are terrific to make as a healthy snack or to serve at a party.
Put the eggs in a medium pot and cover them with 1 inch of water. Put a lid on the pot and bring the water to a boil. Turn the heat off and let the eggs sit in the hot water for 12 minutes.
Remove the eggs and put them in a bowl of cold water with ice cubes for 10 minutes to stop the cooking.
Air Fryer
Preheat the air fryer for 3 minutes at 300 F. Air fry the eggs for 13-15 minutes (check one egg after 13 mins). Put the eggs in a water bath for 10 minutes
Instant Pot
Insert the trivet into the IP and add 1 cup of cold water. Place the eggs on the trivet, pressure cook the eggs on high for 6 minutes. Do a natural release for 1 minute. Remove the eggs and put them in a water bath for 10 minutes.
Make the Deviled Eggs
Once the eggs have completely cooled, slice them in half lengthwise, carefully scoop out the yolks, and add the yolks to a small mixing bowl.
Mix in the mayo, mustard, apple cider vinegar, and salt and pepper. If you want to make a light orange filling, puree 3 teaspoon of store-bought roasted red peppers, and add them to the eggs. Paprika could work too but hasn't been tested. Adjust seasonings if needed.
A mess free tip for filling the eggs is to make a piping bag from a sandwich baggie. Put the filling in the bag, close the top, snip a very small corner, twist the top section of the baggie to push the filling down towards the hole, and push the filling through that hole into the egg whites.
Decorate Spooky Style
Pumpkins - To make pumpkin deviled eggs, you can either keep them yellow colored for simplicity or you can mix in 3 teaspoon pureed roasted red pepper to turn the mix light orange. Once you've filled the whites with the egg mixture, make lines going lengthwise down the pumpkin, sprinkle them with paprika, and add a ½" piece of chive to make the pumpkin stem.
Spiders - To make spider deviled eggs, take a whole black pitted olive and cut it in half lengthwise. Use half of the olive to make the body and use the other half to cut it into spider legs.
Devils -The deviled Halloween eggs look good with the egg cut lengthwise or crosswise. Fill the egg white half with the egg mixture (yellow or follow the pumpkin instructions for light orange colored yolks). Cut the devil parts with a sharp knife from red bell pepper. Decorate and eat!

The cooked eggs will last up to 1 hour on the counter and up to 2 days in the fridge. This is an easy recipe to cut in half or to double depending on how many people you're serving. Pureed roasted red pepper can be combined with the egg yolks to make light orange pumpkins, or avocado can be added to make light green.
