Ingredients

  • 1 ½ pounds flank steak or stew beef, thinly sliced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • ½ cup beef broth
  • ¼ cup sugar-free stir fry sauce (such as G Hughes or Primal Kitchen)
  • 1 tablespoon golden monk fruit sweetener
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • 10-11 ounces broccoli florets

Instructions

  • Add the sliced beef, onion, garlic, beef broth, sugar-free stir fry sauce, and golden monk fruit sweetener to the slow cooker. Stir everything together until the beef is coated in the sauce.
  • Cover and cook on Low for 5 to 6 hours or High for 3 to 4 hours, until the beef is fork tender.
  • About 30 minutes before serving, whisk together the cornstarch and cold water to make a slurry. Stir it into the slow cooker to thicken the sauce.
  • Add the broccoli florets, cover again, and cook for another 30 minutes until the broccoli is tender but still bright green.
  • Taste and adjust the seasoning if needed. Garnish with sesame seeds or sliced green onions before serving if desired.

Notes

  • For the lowest carb version, use a sugar-free stir fry sauce such as G Hughes Sugar Free Stir Fry Sauce or Primal Kitchen Stir Fry Sauce. These help keep the recipe keto friendly while adding plenty of flavor.
  • Golden monk fruit sweetener is an easy 1:1 replacement for brown sugar in this recipe.
  • Slice the beef thinly across the grain for the most tender texture.
  • Serve over cauliflower rice for a complete low carb meal or with steamed rice if preferred.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 2 months.
