This Easy Cottage Cheese Flatbread is a soft, high protein, no egg flatbread made with cottage cheese and flour. Cooked in a skillet in just minutes, it's perfect for wraps, pizzas, dipping, or serving alongside your favorite meals.
In a large mixing bowl, combine the cottage cheese, all-purpose flour, baking powder, and salt. Stir until a shaggy dough begins to come together.
Transfer the dough to a lightly floured surface and knead gently for about 1 minute, just until smooth. If the dough feels sticky, sprinkle in a little extra flour as needed.
Divide the dough into 4 to 5 equal portions. Roll each piece into a thin round, about ⅛ inch thick.
Heat a large nonstick or cast iron skillet over medium heat. Once hot, place one flatbread into the skillet.
Cook for 2 to 3 minutes per side, or until golden brown spots appear and the flatbread is cooked through. Repeat with the remaining dough.
Stack the cooked flatbreads on a plate and cover them with a clean kitchen towel to keep them soft until ready to serve.
Notes
Blend the cottage cheese first if you prefer a smoother dough.
If using self-rising flour, omit the baking powder.
A 1:1 gluten-free flour blend or a 1:1 keto baking flour can be substituted for the all-purpose flour.
Keep the skillet at medium heat so the flatbreads cook through without burning.
