Slow cooked in a rich and fragrant broth, dutch oven corned beef and cabbage melts in your mouth with its tender texture and unique flavor - a delectable combination of juicy meat, vegetables, and spices. It's a Whole Lotta Yum!
3-4lbs.Corned beef brisketrinsed (with seasoning packet that is included)
2lbs.Yukon Gold potatoes
3Carrotssliced thick
1Yellow onioncut into thick slices
4Garlic clovespeeled
⅓cupDark brown sugarpacked
1small Cabbagecut into wedges
12ouncesGuinness draught beernot stout, it's more bitter
12ouncesBeef broth
Garnish with chopped fresh parsley and butter for the potatoes
Instructions
Rinse the brine oof of the corned beef, set aside the seasoning packet to use in the recipe.
Preheat your oven to 350 degrees Fahrenheit.
Place the corned beef in the middle of the Dutch Oven and place the potatoes around it.
Sprinkle the onion slices, carrots, and garlic on top of the potatoes.
Pour the bottle of Guinness draught beer and beef broth over the top of the corned beef.
Sprinkle the corned beef seasoning packet and dark brown sugar over the corned beef.
Put the lid on the Dutch oven and bake it for 1 ½ hours, then flip the corned beef brisket and cook it another hour.
Cut the end off the cabbage and cut it into 4 equal chunks.
Add the cabbage wedges tot he pot and cook everything for 30 more minutes.
Let the Dutch oven corned beef rest for 10 minutes before slicing it into strips. Cut the beef against the grain.
Serve the meet with potatoes, carrots, and cabbage.
Garnish the corned beef with veggies and chopped fresh parsley.
Notes
We love to serve the potatoes topped with a little butter. This is also delicious served with our creamy horseradish sauce, a whole grain mustard, or our caramelized onion stout gravy if you can't get enough Guinness.
Guinness Draft beer is recommended instead of Guinness Stout since it's a milder flavor. Or use any milk beer of your choosing, or just use beef broth for a beer free recipe!
If your purchased a corned beef brisket that didn't come with a seasoning packet, just substitute store-bought pickling spices for the seasoning mix.
