An easy raw broccoli salad recipe with bacon and sunflower seeds that's delicious, simple, and easy to adapt. We seriously mean it when we say this is the best broccoli salad recipe ever!
2heads of broccolitops only (chopped into bite size pieces)
8cooked bacon sliceschopped
½cupred oniondiced
1cupshredded sharp cheddar cheese
½cupsalted sunflower seeds
½cupraisins or dried cranberriesoptional
1cupmayonnaise **see recipe note
2Tfresh lemon juice
2tablespoongranulated sugaror monk fruit or honey
Instructions
In a small bowl, mix the mayo, freshly squeezed lemon juice, and sweetener. Set it aside or put it back in the fridge.
In a large bowl combine the chopped broccoli, cooked bacon, red onion, sunflower seeds, raisins, and the shredded cheddar cheese.
Add the dressing to the salad and combine well.
Chill for 1+ hours before serving for the best flavor. Enjoy!

Notes
Instead of raisins or dried cranberries, you can also skip the fruit entirely or you can use currants, dried berries, or fresh fruit like graps, blueberries, or apple slices.
This salad tastes best using a high quality mayo. You can use half Greek yogurt or sour cream to cut the fat or reduce the mayo, but if you aren't watching your calories we'd really recommend sticking to the mayo for best flavor. We make it both ways depending on whether we're making it for a BBQ or holiday, or making it as a meal prep lunch for the week.
You can also make a raw cauliflower broccoli salad instead of just broccoli for variety.
Use apple cider vinegar if you don't have fresh lemons. Do not use lemon concentrate!
